Poached Eggs in Red Wine—My Way
Sometimes you just have to do things your way.
In this video, I experiment with poaching eggs in red wine—not just in wine, but after marinating them in it. I refrigerated cracked eggs in red wine for 3 hours to gently firm the whites, then poached them in the same wine bath. That same wine was reduced with onions, garlic, and thyme, then finished with a swirl of butter for a rich, glossy sauce.
The final dish? Poached eggs over smoked steak tartare, drizzled with that bold red wine reduction.
It’s unconventional. It’s moody. It’s all about intuition and curiosity.
