These are crispy and delicate great with a cup of coffee or tea....
6 Tablespoons unsalted butter room temperature
1 cup powder sugar
4 egg whites
2 teaspoons vanilla
2/3 cup all-purpose flour
1/8 teaspoon salt
In a large bowl cream butter and add powder sugar till smooth
Add egg white and beat on high till combined and smooth
then add vanilla. Slowly add flour and salt till all becomes like pudding
Lightly grease cookie pan use a tablespoon of batter place on tray only bake 4 cookies at a time. Using the back of the spoon spread out cookie 3x4 onto pan Bake at 425 for 3 minutes edges will be golden brown while hot remove cookie from pan. Roll hot cookie lengthwise onto the handle of a wooden spoon to form shape. Place cookie on cooling rack to cool.
Once cookie is cool dip one end of cookie into melted chocolate. Let chocolate dry
Melt 8 oz of chopped chocolate with 1-1 /2 Tablespoons of solid shortening in a bowl and place in a mircowave till melted and smooth.
