South Albania - Turshi with Aubergine & Pepper, Byrek & Hasude | At our Neighbour's Table

Описание: Every year before winter sets in, Dhurata Daupaj prepares hundreds of jars of preserves known as ‘turshi’. Brine or oil and vinegar keep the vegetables delicious and edible. Dhurata uses a vegetable filling for her aubergine turshi and for the paprika turshi she uses a cream cheese filling made from her own goats' milk.

A few years ago, Dhurata, her husband Sofo and their three daughters started a new life in the mountains of southern Albania. Overlooking the distant coast, they live with their many goats, cows, poultry and horses, and a large vegetable garden.
They produce almost everything they need or find it on the mountain slopes.

This independence is important to them – they still have vivid memories of forced collectivisation under the dictator Enver Hoxha.

In her traditional wood-fired kitchen, Dhurata prepares the herb-filled pastry ‘byrek’, goat’s meat in milk and the dessert ‘hasude’.
