This is a classic Brazilian recipe from the countryside of the São Paulo state. The name means 'Cow Stuck in the Mud'. It was invented by the Carreteiros, the Brazilian cattle drivers. Rugged man who were out in the field for weeks at a time, taking cattle to the markets or to the neighbouring state - Minas Gerais.
