Brand new from Boann Distillery!
Is their new Single Pot Still, finished in Marsala wine casks a good whiskey? Let's find out!
This week, we're looking at the first of three new whiskeys from the Boann distillery. While they still release sourced whiskey under the "Whistler" range, this is entirely their own distillate!
It's about three and a half years old, and spent about two and a half years in ex-bourbon casks before being finished in Marsala wine casks for a year. It comes in at 47% ABV, is natural colour and non-chill filtered.
While this is a core product, it will evolve over time, as future bottlings will incorporate older whiskeys as their stocks mature, and the mashbill will change. That's because when they first started running their stills, Boann were using a 50/50 split of malted and unmalted barley, but they have since switched over to a slightly more complex mashbill of 50% unmalted barley, 48.5% malted barley, 1.1% oats and 0.4% rye. While that sounds like it's only a small change, it actually has a huge impact on the final spirit, and their New Make has won plenty of awards, so expect the profile to evolve in the coming years.
But it's what's inside THIS bottle right now that counts, so let's get to it!
Boann Single Pot Still - Marsala Cask Finish Tasting Notes:
Nose:
The nose is quite light, but the immediately note is sweetness, with caramel and honey wrapping up a nice hit of oak spice, a touch of pepper and only a little hint of apple fruitiness and none of the citrus I would normally associate with Marsala casks.
Palate:
The palate is much more spicy, with the oak and pot still spices pushing through the sweetness. It's still quite delicate and the influence of of the Marsala cask is very light, with only a hint of orange citrus, but the majority of the notes on the palate are those spices.
Finish:
The finish is medium-long, still delicate, but with a lingering tingly pepper spice on the tongue which lasts longer than the sweetness.
Overall, this is a solid little whiskey, but we do wish the Marsala cask influence was more apparent, as they can give some really nice notes. I trust that Boann will be aiming to increase that influence in the coming releases, as they have a really great cask programme, and the other two whiskeys in this release show much more influence. That said, it's an enjoyable pot still whiskey, at a solid ABV, with an interesting mashbill, and I think relatively fairly priced.

I'm a total whiskey nerd and this channel is all about Whiskey, Whisky, Bourbon, Rye, Pot Still Whiskey and Single Malt Whiskey. I'm always on the hunt for the best whiskey and love making whiskey review videos. My passion is for Irish whiskey, but I'm open to looking for the best Bourbon or the best scotch too!
I'm an Irishman, but that doesn't stop me from enjoying whiskeys from all around the world, from Kentucky bourbon to Japanese single malts. I also love making cocktails, especially whiskey cocktails (or whisky cocktails) and really enjoy taking a classic recipe and adding my own twist to it, or making simple, 3 ingredient cocktails
