Don’t throw away that pulp from your winter wellness shot — turn it into something delicious!
These Orange Cinnamon Muffins are soft, cozy, and gently sweet, with warm spices and a citrusy kick. 🍊✨
Orange Cinnamon Muffin (with Wellness Shot Pulp)
Makes 4 muffins
Ingredients:
¾ cup (90 g) all-purpose flour
½ tsp baking powder
¼ tsp baking soda
½ tsp ground cinnamon
A pinch of salt
leftover wellness shot pulp
1 egg
2 tbsp honey
2 tbsp olive oil
2 tbsp milk (dairy or plant-based)
(Optional: raisins, chopped walnuts, or a bit of grated apple)
Instructions:
1. Preheat the oven to 180°C (350°F). Line a mini muffin tray with paper cups.
2. In a bowl, mix the dry ingredients: flour, baking powder, baking soda, cinnamon, and salt.
3. In another bowl, whisk together the egg, honey, oil, milk, wellness shot pulp.
4. Pour the wet ingredients into the dry and stir gently until just combined (do not overmix).
5. Spoon the batter into muffin cups, filling about ¾ full.
6. Bake for 18–22 minutes, or until golden on top and a toothpick comes out clean.
7. Let cool and enjoy! Store at room temperature for 2 days, or in the fridge for 4–5 days.
