In Italy, lentils are believed to bring good luck and are often eaten shortly after midnight to wish good fortune and prosperity to friends and family for the coming new year! With an abundance of aromatic vegetables and protein rich lentils, this sauce is the perfect vegan option to pair with any of your favourite pasta shapes. This step-by-step video guide will take you through the short preparation & method of making this delightfully warming winter sauce.
Ingredients you'll need:
500g dried lentils (we like to use either green or brown lentils)
800g passata
800ml water
1 clove garlic
100g onion
80g carrot
1 stem of celery
½ fresh chilli
4 leaves fresh basil
4 sprigs of fresh rosemary
¾ glass dry vegan white wine
2 tbsp extra virgin olive oil
Salt & pepper to taste
