How to make French Chocolate tarts

Hello everyone, so here is my first online baking class i am sharing with you and today i am going to teach you how to make 6 chocolate & caramel tarts. For this creation i suggest to do it in 2 days, the first day I will be teaching you how to make the chocolate sugar dough, dark glaze and the chocolate mousse since they need time to set in the fridge or freezer.
The second day i will be teaching you how to make the chocolate tart crust, sea salt caramel, chocolate ganache, glazing and 2 chocolate decorating and to finish to assemble the tart.
Here are the recipes:
•CHOCOLATE SUGAR DOUGH
-90g icing sugar
-25g cacao
-120g butter
-2g salt
-30g almond flour
-50g whole egg
-210g flour
•CHOCOLATE MOUSSE
-100g dark chocolate (70%)
-100g heavy cream
-150g whipped cream
•DARK GLAZE
-100g water
-240g sugar
-80g glucose
-160g heavy cream
-20g mirror glaze
-85g cacao powder
-13g gold gelatin(6.5 sheets)
•SEA SALT CARAMEL
-50g water
-110g sugar
-110g heavy cream
-85g butter
-2g sea salt
1 vanilla bean or 10g vanilla paste
•CHOCOLATE GANACHE
-120g dark chocolate (70%)
-120g heavy cream
The shape for the chocolate decoration i cut, is a piece of plastic 12cm high 2.5cm wide.
