Today, we’ll explore one of the most fascinating and vital processes inside your small intestine — the digestion of lipids, beginning with a powerful step called emulsification.” “In the small intestine, large fat globules are broken down into tiny droplets — a process known as emulsification. This step increases the surface area for enzyme action and makes digestion faster and more efficient.” his emulsification happens because of bile salts and intestinal movement. “After emulsification, enzymes from the pancreas start their job.
The most important one is pancreatic lipase. It breaks triacylglycerols into 2-monoacylglycerol and free fatty acids.”
Bile salts are made in the liver, stored in the gallbladder, and released into the duodenum.
They are amphipathic — meaning they have both water-loving and fat-loving sides — allowing them to act like natural detergents.” “But lipase doesn’t work alone! It needs colipase, a helper protein that anchors lipase to the fat droplet surface and keeps it active, even in the presence of bile salts.” Two more enzymes play key roles —
Cholesteryl ester hydrolase, which releases free cholesterol,
and phospholipase A₂, which removes fatty acids from phospholipids.” “The secretion of these enzymes is carefully controlled by hormones.
Cholecystokinin (CCK) is released when fat enters the small intestine. It signals the gallbladder to release bile and the pancreas to release enzymes — while slowing stomach emptying.
