Ingredients
For the Roasted Vegetables
• 1 large sweet potatoes, peeled and cubed
• 3 large carrots cut into 1½ inch sticks
• 3-4 sprigs of thyme
• 1 tablespoon extra-virgin olive oil
• ½ teaspoon sea salt
• Black pepper, to taste
• ½ teaspoon garlic powder
For the Salad
• 6 cups mixed greens
• ¼ cup diced red onion
• ½ cup feta or Goats cheese
• 1 honey crisp apple, Diced
• ½ cup pomegranate seeds or dried cranberries
• ½ cup candied pecans (store bought or homemade)
For the Dressing
• 1 garlic clove, minced
• Juice of ½ of a lemon
• ¼ cup apple cider vinegar
• 1 teaspoon Dijon mustard
• 1 tablespoon maple syrup or honey
• ¼ teaspoon pepper
• ½ teaspoon salt
• ½ cup olive oil
• ½ teaspoon dried thyme or fresh thyme
