This bread proves patience tastes better. 🥖
Overnight spelt bread (Dutch oven 20–21 cm)
Ingredients
• 450 g spelt flour (Type 630)
• 315 g cold water
• 9 g salt
• 1 g fresh yeast (or 0.4 g dry)
• 8–10 g olive oil (optional)
Optional:
• 50 g whole spelt flour (+10 g water)
• 30 g sunflower seeds
Method
1️⃣ Mix flour + water, rest 20 min (autolyse)
2️⃣ Add salt & yeast, gently knead 2–3 min
3️⃣ Stretch & fold 2x, every 10 min
4️⃣ Rest at room temp 1 h
5️⃣ Cold ferment 8–16 h in the fridge
6️⃣ Rest at room temp 3 h
7️⃣ Shape gently, seam side up
8️⃣ Preheat Dutch oven 250 °C / 480 °F – 40 min
9️⃣ Bake 20 min covered, then 25 min at 220 °C
Cool completely before slicing.
