Shrikhand is very popular yogurt based dessert or sweet in India. A large number of people head straight for kesar shrikhand or mango shrikhand right after dinner, so a crowded shrikhand stall is a common sight in most of the Indian places. This creamy, nutty, thick flavored dessert is also part of famous Krishna Janmashtami recipes or Dussehra recipes.
Many may not know this, and it was surprise even for me when I first came to know about it - Recipe of Shrikhand is same as Sikarni recipe from Nepal. There are many variations of sikarni in Nepal but the basic ingredients and the method of preparation is same as shrikhand recipe. Now let’s check out how to make shrikhand at home.
This homemade Shrikhand recipe in Hindi is very simple. We will follow traditional method for preparing kesar shrikhand which is one of the two most popular versions, the other being mango shrikhand. I will upload mango shrikhand recipe soon if you are interested.
We will need only 2 basic ingredients for basic shrikhand - Curd (Yogurt) and Powdered Sugar. And then we add flavor of our choice. We have used Kesar (saffron) and Elaichi (Cardamom) powder in this kesar elaichi shrikhand recipe. Note that it is very important to take fresh curd. Also thicker the curd the better. So we will first drain curd by putting it in a muslin cloth or cheesecloth or a cotton cloth/towel and hanging it overnight or atleast few hours. At the end of it you should get thick yogurt called hung curd or chakka in Marathi. Then we add powdered sugar, cardamom powder, kesar to it and mix well. Refrigerate it for few hours and the delicious shrikhand is ready to serve. You can top it with some nuts for crunchy taste!
