We’re a British family who fell in love with American barbecue — not through perfection, but through curiosity, mistakes, smoke, and respect for the craft.

It started in the UK with a cheap smoker, thin metal, and no real idea what we were doing. The briskets were dry. The ribs were questionable. But every cook taught us something new — about fire, patience, and why barbecue can’t be rushed.

Our first real taste of American BBQ came in Florida, at Big John’s Rockin’ BBQ.
Nothing flashy. Just honest barbecue. And that’s when it clicked — barbecue wasn’t an idea anymore. It was real.

That moment led us deeper.

We travelled to the heart of American barbecue culture — Texas and North Carolina — tasting legendary BBQ at places like Goldee’s BBQ, Franklin Barbecue, Terry Black’s Barbecue, and Sam Jones BBQ.
Each stop taught us something different — about brisket, whole hog, smoke, tradition, and why American BBQ isn’t one thing… it’s many.

We came home changed.

We didn’t want to copy American barbecue.
We wanted to honour it — from a British backyard.

So we committed.
We bought a Franklin Backyard Offset Smoker.
Built a proper BBQ shelter to cook year-round in the UK.
And expanded our cooking with a Pit Barrel Cooker — learning hot-and-fast BBQ with chicken, burgers, and even a tomahawk steak over live fire.

Since then, it’s been cook after cook:
Texas-style brisket
Dino beef ribs
Spare ribs and baby backs
Pulled pork
Homemade sausage
And plenty of lessons along the way

But this channel has never been about chasing perfection.

It’s about the table.
Sharing food with family and friends.
Kids learning that good food takes time.
And discovering that barbecue isn’t just what’s on the plate — it’s who’s standing next to the pit with you.

This video is our love letter to American barbecue.
And the journey is far from finished.
