Disguising water weight as fish weight, also known as Short Weight. Over Glazing seafood is currently the most common form of deceptive seafood practices by seafood producers to disguise water weight as fish weight in order to make more profits. There are companies that fully disclose the glaze amount (water weight) by stating values such as "90% net weight or even values as low as 60% net weight however after say a "re-pack" this information might not make it to chefs or end consumers thus they are not getting what they paid for.
