Your guide to making the BEST vegan Mac and cheese. NO BLENDER. Omni friendly AND can even be made completely oil free (if that's your thing)??? Yes, you heard me correctly. I've made it happen right here. let me know what you think
Written recipe
4 cups of UNSWEETENED, NOT VANILLA plant milk (soy preferably. I used cashew because I have no fridge space) (make sure it's not unsweet but still vanilla you may cry)
1 lb pasta
3 pinches/1 TBS salt to start with
generous 1 tsp scoops each, if you don't have these or are a wuss about msg just go ahead and toss an additional TBS of salt in, and do some light reading on how racism is behind msg hysteria,
bullion, marmite, mushroom seasoning, garlic powder
2 chunks/TBS white miso paste
to taste: tony cacheries, zatarains creole seasonings, old bay, paprika, pepper, nutmeg,, onion powder if you have it
if you're a spice wuss, add ANOTHER tbs salt
3 tbs mustard of choice. I used dijon here
COMPLETELY OPTIONAL 2-4 TBS nutritional yeast
most or a full package of kite hill almond cream cheese
2-6 TBS vegan butter
additional water if needed
I used parsley as a garnish
Proportions for this recipe are based off of Soul Vegetarian's 15 year old Mac and cheese video. it's honestly a classic and needs to be made at least once especially if you love nutritional yeast
