Fluffy Lemon Curd Donuts Recipe
Yields 20 donuts
These donuts are incredibly soft, pillowy, and filled with silky smooth lemon curd — surprisingly simple and unbelievably delicious!
Ingredients:
Lemon Curd
4 tablespoons lemon zest (from about 4 lemons)
2 cups granulated sugar (400 g)
12 egg yolks
1 cup minus 2 tablespoons fresh lemon juice (about 200 ml)
1 cup (225 g) cold, cubed butter
Donuts
840 grams flour (6 cups + 9 tablespoons)
120 grams sugar (9 tablespoons)
1 1/2 teaspoons salt
3/4 teaspoon nutmeg
3 eggs
120 grams melted butter (1 stick)
360 grams warm milk (1 1/2 cups)
21 grams dry yeast
Oil for frying (vegetable, canola, or sunflower recommended)
To make the lemon curd:
First, blend 4 tablespoons of lemon zest into 2 cups of sugar using a food processor or your fingers.
Strain 12 egg yolks into a pot and lightly beat with a wire whisk. Add the lemon sugar and whisk until lighter in color.
Gradually stir in 1 cup minus 2 tablespoons of lemon juice.
Cook over medium heat, whisking constantly, until thickened and just begins to bubble.
Remove from heat and add 1 cup of cold, cubed butter. Stir until fully melted.
Strain into a container and refrigerate while you prepare the donuts.
To make the donuts:
In a bowl, combine 840 grams of flour, 120 grams of sugar, 1 1/2 teaspoons of salt, and 3/4 teaspoon of nutmeg.
In a separate bowl, whisk together 3 eggs, 120 grams of melted butter, 360 grams of warm milk, and 21 grams of dry yeast.
Combine the wet and dry ingredients, then knead by hand for 10 minutes, or use a mixer.
The dough will be sticky at first — don’t be tempted to add more flour!
Cover and let rise until doubled in size, about one hour.
Roll the dough to 1/2 inch thick and cut donuts using a 3-inch cutter.
Let rise again for another 20 minutes.
Cut around the parchment under each donut and fry at 320-330°F until golden. The donuts should bubble gently in the oil.
Cool for 5 minutes, then roll in sugar.
Fill the donuts:
Transfer the lemon curd into a piping bag.
Use something long and metal (like a thermometer or knife) to make space in each donut for the filling.
Pipe in lemon curd generously until each donut feels heavy.
These donuts are best the same day, but if you’re enjoying them later, just pop them in the microwave — they’ll taste just as amazing!
