Farali Handvo (Samak–Rajgira)
Ingredients
• 1 cup samak rice (soaked 2–3 hrs)
• 1½ cup rajgira flour
• ½ cup curd
• 1 boiled potato (grated)
• 4 tbsp crushed peanuts
• 1 tsp ginger–green chili paste
• 1 tsp sugar
• Sendha namak to taste
• ½ tsp cumin seeds
• ½ tsp sesame seeds (optional)
• Few curry leaves
• 1 tbsp oil/ghee
• ½ tsp baking soda or Eno
• Water as needed
• Chopped coriander (optional)
Method
1. Make Batter: Grind soaked samak rice coarsely. Mix with rajgira flour, curd, grated potato, peanuts, ginger-chili paste, sugar, and salt. Rest 10–15 mins.
2. Temper: Heat oil/ghee, add cumin, sesame, curry leaves. Mix into batter. Batter should be little runny as shown in the video while pouring on the pan, if needed add little water to adjust consistency
3. Add Soda: Just before cooking, add baking soda/Eno and mix lightly.
4. Cook: Grease tawa or pan. Spread batter, cover and cook on low-medium heat 5–7 mins each side until golden and crispy.
5. Serve: Cut and enjoy hot with farali chutney or curd.
