INGREDIENTS
• 200g Pearl Couscous, pearl-shaped pasta made from semolina flour, or Fregola pasta which is very similar
• 200g Pissourkotiko Traditional Sheep Halloumi, @CharalambidesChristis, diced in very small cubes (about 5mm)
• ½ Cup Peas, frozen
• ⅓ Cup Black Raisins, small ones
• ⅓ Cup Pistachios, raw, roughly chopped
• ⅓ Cup Pomegranate Seeds
• ½ Red Bell Pepper, diced in very small cubes (about 5mm)
• 1 Carrot peeled and diced in very small cubes (about 5mm)
• 2 Small Celery Stick, diced in very small cubes (about 5mm)
• 1 Cup Baby Rocket Leaves
For the Dressing
• 75 ml EVOO (Extra Virgin Olive Oil)
• 15 ml Apple Cider Vinegar
• 10 ml Lemon Juice
• 40ml Orange Juice
• Grated zest of ½ an orange
• ½ tsp Dry Coriander
• 1 tsp Dijon Mustard
• ½ tsp Fine Sea Salt
• ½ tsp freshly ground Black Pepper
DIRECTIONS
1. Start with the dressing by adding all the ingredients except of the oil in the glass bowl and while whisking, slowly pour the oil for a nice emulsification. Keep aside.
2. Bring a medium pot to a boil, add the pearl couscous and cook according to package instructions. Drain and keep aside to cool in a large bowl.
3. To assemble the salad, use the large bowl with the cooked pearl couscous and add the halloumi and the rest of the ingredients except of the rocket leave. Pour the dressing and mix well. Add the rocket leaves and gently toss.
