*POTATO PASTRY (PAN-FRIED BREAKFAST)*
Yields: 4 Servings
Prep Time: 5 Minutes | Cook Time: 25 Minutes
*Ingredients:*
3 medium-sized Eggs
1/2 cup Milk (200 ml standard measuring cup used; liquid yogurt may be substituted)
1/2 cup Vegetable Oil (for batter)
1/2 cup Flour (added gradually)
1 teaspoon Baking Powder (CRITICAL)
1/2 teaspoon Salt (or to taste)
1/2 teaspoon Red Pepper Flakes (or chili flakes)
50 grams Grated Cheese (optional but highly recommended)
Pinch of Parsley, chopped
3 small Potatoes (or 1 large potato), peeled and thinly sliced
3-4 Tablespoons Vegetable Oil (for frying potatoes)
*Instructions:*
1. In a bowl, whisk eggs well. Add milk and 1/2 cup oil, mixing until combined.
2. Gradually add the flour and baking powder to create a smooth batter, avoiding clumps.
3. Stir in salt, pepper flakes, grated cheese (if using), and parsley. Set aside.
4. Heat 3-4 tablespoons of oil in a pan over high heat. Add thinly sliced potatoes and fry until nicely golden brown.

6. Immediately turn the heat down to the LOWEST setting and cover with a tight-fitting lid.
