Ingredients:
• 2 cups almond flour
• 2 tablespoons coconut flour
• 1 teaspoon baking powder
• 1/2 teaspoon baking soda
• 1/2 teaspoon salt
• 4 tablespoons unsalted butter, frozen and grated
• 2 large eggs
• 2 tablespoons Greek yogurt
• 2 tablespoons unsweetened almond milk
• 1 tablespoon apple cider vinegar
• 1 tablespoon granulated erythritol (or any keto-friendly sweetener), optional
Instructions:
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
1. Mix almond flour, coconut flour, baking powder, baking soda, and salt in a bowl.
2. Grate in cold butter and mix until the mixture resembles coarse crumbs.
3. In another bowl, whisk together wet ingredients (including vinegar and erythritol if using).
4. Combine wet and dry ingredients, stirring until a slightly sticky dough forms.
5. Lightly flour a surface with almond flour, knead dough a few times, then roll out to 1-inch thickness.
6. Cut biscuits with a 2.5-inch cutter or glass, re-rolling scraps as needed.
7. Place biscuits on the baking sheet and bake for 12-15 minutes until golden brown.
