                    This Aegean style, quick and easy celery root / celeriac salad is a refreshing mezze dish that's perfect for any meal or gathering. Crunchy grated celeriac mixed with creamy garlic yogurt, tangy lemon, and the extra crunch of walnuts, this no-cook salad is bursting with flavors and textures. Fresh dill and mint add a fragrant herbaceous touch, while a drizzle of extra virgin olive oil brings it all together. This easy recipe is not only delicious but also healthy and perfect for a light lunch or side dish.

Garlic Yogurt Celeriac Salad
Ingredients:
• 500 g celeriac (celery root), 1 medium
• 250 g strained yogurt, 1 cup
• 150 g Turkish white cheese or Feta cheese
• 2 cloves of garlic
• 1 cup walnuts, 100 g
• 1/2 lemon (juice and zest)
• 1/2 bunch fresh dill (1/2 cup chopped)
• 10 leaves of fresh mint (1/3 cup chopped)
• 2 tbsp Extra virgin olive oil (to garnish) 
Instructions:
1. Peel the hard skin of the celeriac and coarsely grate with the large side of a grater
2. Quickly squeeze the juice of 1/2 lemon. Combine with grated celeriac, mix and set aside
The lemon juice will prevent the celery root from going dark and add a bit of acidity.
3. Finely chop the dill and fresh mint leaves, save some dill for garnish and combine the rest in the bowl.
4. Finely chop the walnuts and save some large pieces for garnish. Add the chopped walnuts into the mixture
5. In a large bowl, mash the cheese with a fork and add the strained yogurt, 
6. Crush the garlic cloves together with 1/2 tsp salt, add into the yogurt cheese mix, whisk and mix to combine
7. Add the celery root mix into the garlic yogurt mixture, mix to combine 
8. Transfer the mixture onto a serving plate, garnish with walnuts, dill sprigs
9. Garnish with the zest of 1/2 lemon and drizzle 2 tbsp olive oil before serving
