Chicken Ceylon is a delicious mild curry cooked with coconut milk. This curry is as simple as they come, and maybe even your pet chimp might like it.
Ingredients
450g (1 lb) chicken, cubed
1 onion grated
200 ml (7 fl oz) coconut milk
1 tbsp garlic & ginger paste
1 bunch curry leaves
1 dried red chilli, broken into pieces
1 tsp mustard seeds
½ tsp salt
2 tbsp ghee or vegetable oil
Instructions
Heat the ghee over a medium heat and fry the onions, garlic & ginger paste, mustard seeds, salt and the chilli pepper for about 3 minutes.
Add in the chicken and stir-fry for about 5 minutes to brown the meat.
Add in the coconut milk and curry leaves. Bring to the boil. Cover and simmer gently for 20-25 minutes.
It’s ready!!!!.
Titli's Tips
If your gravy becomes a bit thick, add some water and bring it back to the boil before serving.
