In Guyanese households cumin is known as Geera or Jeera. In this video I show you how to patch/roast cumin seeds to grind them for use in recipes. Usually you would use a Lorha and Sil to grind the geera, which is also known as a masala brick or an old fashioned mortar and pestle. Hopefully in one of my future videos I can show you how one looks. In regular supermarkets, the cumin powder that is sold tends to be very light in color. By roasting the cumin seeds it gives the spice a whole new identity, and adds a much better taste to your recipes. It is also much stronger, allowing you to use less in food items. You should store this Geera in a glass bottle or in a ziplock bag and it will stay for months.
Ingredients and Measurements:
2 cups whole cumin seeds (you can make as much or as little as you would like)
