Ingredients:
For Dhokli:
1 cup whole wheat flour
1/4 teaspoon turmeric powder
Salt to taste
Water, as needed
For Valor Dhokli Ki Sabzi:
1 cup chopped valor (hyacinth beans)
1/2 cup tuvar dal (pigeon peas), soaked for 30 minutes
1 medium-sized onion, finely chopped
2 medium-sized tomatoes, pureed
1 tablespoon ginger-garlic paste
1/2 teaspoon mustard seeds
1/2 teaspoon cumin seeds
1/4 teaspoon asafoetida (hing)
1 teaspoon turmeric powder
1 teaspoon red chili powder (adjust to taste)
1 teaspoon coriander powder
1/2 teaspoon garam masala
Salt to taste
2 tablespoons oil
Fresh coriander leaves for garnish
Instructions:
For Dhokli:
In a bowl, mix whole wheat flour, turmeric powder, and salt.
Gradually add water and knead it into a smooth, firm dough.
Roll out the dough into a thin chapati.
Cut the chapati into small diamond-shaped pieces (dhokli).
Let them air-dry for about 30 minutes.
For Valor Dhokli Ki Sabzi:
Heat oil in a pan. Add mustard seeds and cumin seeds. Let them splutter.
Add chopped onions and sauté until golden brown.
Add ginger-garlic paste and sauté until the raw aroma disappears.
Add pureed tomatoes and cook until the oil separates.
Add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well.
Add chopped valor and soaked tuvar dal. Stir to coat them with the masala.
Add water to achieve the desired consistency.
Bring it to a boil, then add the prepared dhokli pieces.
Cook until the dhokli is soft and fully cooked.
Garnish with fresh coriander leaves.
Serve hot Valor Dhokli Ki Sabzi with chapati or rice for a hearty and delicious meal! 🌿🍲
