Today I’m sharing 4 quick and easy chutney recipes using dry copra (coconut), pickled mangoes, cranberries and fresh beets. Delicious with kanji, idlis and dosas!
Ingredients:
Copra/Coconut Chammanthi:
1 cup copra (soaked in water for 3-4 hours hours) or fresh coconut
¾ - inch piece of ginger, diced
1 garlic clove, sliced
¾ cup curry leaves
2 dry chilies fried in oil, more to taste
½ tsp salt, more to taste
3 tsp tamarind paste, more to taste
4 small pearl onions
Mango Chammanthi:
1 cup grated coconut
1 cup mangoes brined in salt or fresh mangoes
4 ripe kanthari chilis or 2 dry red chilis fried in oil
5 small pearl onions
½ tsp salt
Cranberry Chammanthi:
1 cup grated coconut
½ cup fresh or frozen cranberries/ Indian gooseberries (amla)
2 dry red chilis fried in oil, more to taste
3 small pearl onions
½ tsp salt, more to taste
½ - inch piece ginger
1 garlic clove
3 sprigs curry leaves
Beetroot Chammanthi:
1 cup grated coconut
½ fresh beets, peeled and diced
2 pearl onions
3 dry red chilis fried in oil
½ tsp salt
½ - inch piece ginger diced
1 garlic clove
3 sprigs curry leaves
2 tbsp tamarind paste
