Learn the secret to making this authentic soup and bring Brazil to your dining table!
RECIPE:

Soak 3 Cups garbanzos (chick peas) overnight in 6 cups water
Pour off the water.
Put the soaked beans into the pressure cooker. Cover with 1” hot water. Secure the lid of your pressure cooker properly. Bring to a boil, (the pot will belch steam and whistle) lower the heat to a low simmer. Turn off after 25 minutes. Remove from the stove top, let the pot cool and depressurize. You can run cold water over the pot in the sink to speed up the cooling and depressurization.
While the beans are cooking prepare the soup:
2 T water
2 T olive oil
1 T minced garlic
1 large onion, diced
4 medium carrots diced
6-10 stalks of celery, sliced, celery is very important and delicious in this soup
4 bay leaves
3 t salt
1 serrano pepper diced, or a dash of cayenne
6 C hot water
1/4 C chopped parsley
Water sauté the onions till the water disappears and then add the garlic, stir and sauté for another 30 seconds, add the carrots and celery, add bay leaves, salt and pepper. Stir, cover with lid, leave on high for about 5 minutes, mixing and checking not to burn, keep covered. Add hot water. Bring to boil, turn down to simmer for 20 minutes till all veggies are soft. Add your cooked garbanzo beans, simmer another 10 minutes. Taste for salt.
Add parsley and serve!
