Mushroom strips with miso sauce & rice | minimal cooking for hot weather days 🥵

Mushroom strips + miso sauce. Super simple for the scorching temperatures.
Sauce:
3 tsps of miso
2 tsps of light soy sauce
2 tsps of sesame oil
1.5 tsps gochujang
3 tsps of honey or agave syrup to make it vegan
1/2 tsps of sugar
Water to make it runnier (about 8 tsps)
2 portions of mushrooms (if you're using king oyster mushrooms - slice, score them and cut them into strips)
Butter (or vegan butter) + some neutral oil for frying
1 small garlic clove, minced
Splash of light soy sauce
Salt
2 generous portions of rice
1. First make the sauce by mixing the ingredients listed together. Set aside.
2. On a medium-high heat, add butter and oil (to stop butter from burning) to a pan and add your mushroom strips first if you have them. DO NOT press them while they’re frying like Derek Sarno/Wicked Kitchen recommends - makes the texture of the mushrooms rubbery and tough to chew.
3. Once they start to get a little crispy add the rest of the mushrooms, garlic and season with salt. Don't cook the mushrooms for too long, it should all be a quick process - you don't want to dry them out.
4. Once they cook for a minute or two, add a splash of soy sauce to add smokiness (soy sauce burns quick). Give it a quick stir and it's done!
5. Serve with rice and any veggies on the side you like!
You may have some sauce left over depending on how much rice you like to eat. It's great to use for stir fries!
