As the Kitchen of Kyoto, what impressed me was that Nishiki Market is an authentic market- it caters not only to tourists, but to local customers and Kyoto chefs, as well. Rather than selling hype foods like Kuromon Market in Osaka, foods and flavors sold here are also for local kitchens. One thing Kyoto has been good at is preserving their traditional culture.
