Dry Cake At Home | No Maida | Atta Suji Cake | No Cream
Dry Cake Method (Oven-Free)
Ingredients:
Flour – ¾ cup
Semolina (Suji) – ½ cup
Powdered sugar – ¾ cup
Malai – 4 tbsp
Milk – 1 cup
Ghee – 3 tbsp
Chopped dry fruits
Tutti fruity – a little
Vanilla essence – 10 drops
ENO – 1 sachet
Method:
Mix Dry Ingredients:
In a large bowl, mix flour, semolina, and sugar well.
Add Malai & Ghee:
Add malai and ghee to the dry mixture and mix properly.
Add Milk:
Gradually add milk while mixing gently.
Tip: Batter should not be too thick or too runny – it should have a ribbon-like consistency.
Add Vanilla & Dry Fruits:
Add vanilla essence and fold in the chopped dry fruits gently.
Rest the Batter:
Cover the mixture and let it rest for 10 minutes.
Tip: Meanwhile, grease the baking tin or pan with oil or ghee so the cake can demould easily later.
Add ENO:
After 10 minutes, add ENO and fold lightly. Do not overmix, or the cake will become hard.
Shift to Pan:
Pour the batter into the greased baking pan and tap lightly.
Sprinkle dry fruits and tutti fruity on top if desired.
Bake in Tandoor:
Place the pan in the tandoor with a stand underneath.
Cover the batter from the top to prevent the cake from sinking in the center.
Bake for at least 25–30 minutes.
Tip: If using baking powder or soda, the cake usually doesn’t sink.
OR
Steam the Cake:
Take a large pot and pour 1–2 inches of water at the bottom. Place a stand or a small bowl inside the pot to hold the greased cake pan. Pour the batter into the pan, cover it with foil or a plate, then cover the pot and steam on medium flame for 25–30 minutes. Make sure the water doesn’t dry out; add more hot water if needed.
Cool & Demould:
Once baked, remove the pan from the tandoor and let it cool slightly.
Then tap gently to demould.
Cut & Serve:
Slice the cake and enjoy with tea or coffee.
