Dink and dry fruit ladoo is a traditionally made during winters in Maharashtra in most of the households . This is a very healthy and most nutritious recipe. Though this recipe indulges a lot of effort, time and a lot of ingredients too, but the end result is truly worth spending time on. I have tried to show this tedious recipe in a very simple way.

Ingredients:
• 150 gms Atta /Wheat flour
• 100 gms besan
• 100 gm Grated dry Coconut
• 200 gm Gudh / Jaggery
• 1/2 cup Pistachios
• 1/2 cup Cashew nuts
• 1/2 cup Almonds
• 1/4 cup Walnuts
• 1 - 2 generous tbsp- Poppy seeds / Khuskus
• 125 gm Dink / Edible gum/ Gond
• 150 gm Kharik powder / Dried dates
• 2 tbsp Methi seed powder /fenugreek seed powder
• 1 tbsp Saunthpowder
• 1 tbsp Black pepper powder
• 1 tbsp cardamom and Nut meg powder
• 250 gm Ghee
Method:
• Heat up a pan on dry roast flaxseeds (Alshi), and poppy seeds(khuskus), .
• In the same pan heat half the quantity of ghee and fry edible gum or dink spoon by spoon as shown. and remove in a plate
• In the same pan add all the dry fruits(almonds, cashew nuts, walnuts and pistachios) and fry them all on a very low flame till they turn a lil nutty.
• In the same pan add grated dry coconut and fry until it turns nice golden .
• Transfer the roasted coconut into the bowl.
• In the same pan add kharik powder and dry roast it a little for about 3-4 minutes till golden
{.* Do not add ghee for kharik it has its oil and the pan has already greased up with ghee which is enough for roasting kharik*}
• In the pan ghee add a little ghee and when it heats up lower the flame and add Wheat flour and Cheak pea flour or besan and roast well till golden brown and beautiful aroma spreads all over•
• If you feel the ghee is less the you can add a little more ghee.
• Grind all dry fruits to a coarse powder if using mixie separately or if in food processor all together with coconut . (It has to be granular)
• Take the fried dink and powder it in the same blender jar
• You can also crush it with hand or use potato masher for this.
• Transfer the mashed dink into the bowl.
• Coarsely gring flax seeds as well. do not powder it.
• Mix everything well together.
• To this mixture add Sunth powder, black pepper powder, roasted and powdered methi seeds, cardamom powder and nuttmeg powder
• In the same pan take gudh and atbsp of water, melt it on medium heat.
• Cook the gudh for about 3-4 minutes.
• Make syrup but do not heat till string consistensy.
• Add the melted jaggery or gudh into the bowl and mix everything well quickly.
• When the mixture is little hot, roll ladoos.
{• You can use sugar syrup instead of gudh syrup. (if you prefer)
• You also can use powdered sugar.
• In that case you don’t have to make sugar syrup.
• But then you have to use lot of ghee for binding. }
• Since I am showing healthy version used jaggery here.
• Dink ladoos are ready. They harden as they cool down
• You can make 40 small ladoos from the ingredients we used.
• If the mixture is too crumbly or cool while you are still in process
of making ladoos and you can’t roll ladoos, then transfer the mixture into microwave, heat it and roll ladoos. 10 secs only till warm. Or heat the mixture in the same pa on a very low.... flame
• So that you can roll the ladoos.
Tips:
.* Do not add ghee for kharik it has its oil and the pan has already greased up with ghee which is enough for roasting kharik
• You also can use raisins or black raisins in this same recipe as prefered.
• If you add raisins fry them along with dry fruits in ghee for frying,
