A delicious eggless Portuguese origin dessert found in parts of Portugal, Goa and Macau. This can be adapted to numerous flavours. Use cashew or ginger biscuits, coconut biscuits are delicious too.
Make it with caramel or melted chocolate. The key is the serradura which, means sawdust in Portuguese, so unlike a cheesecake crust it has no butter.
Ive done versions with coconut crumbs, ground roasted cashews and mango, ginger crumbs with caramel and bananas. Hazelnut chocolate with humble Marie biscuit. Ive added liquor to it.
For 4 one cup portions
300 grams biscuits such as ginger, caramel, coconut
3 cups chopped mangoes 1/2 inch pieces
200 ml heavy whipping cream
200 ml condensed milk
1 tsp vanilla extract
Sprigs of mint.
Method
Blitz cookies of your choice to a fine crumb. Whip cream with vanilla to stiff peaks. Gently whisk in condensed milk.
Layer a large one cup dessert bowl with crumbs at the base, then add whipped cream and mangoes then repeat atleast twice. Top with cream biscuit crumbs and mangoes. Garnish with mint leaves.
