Puran Puri or Flattened Bread with Sweet Lentil Stuffing from Maimoona Yasmeen's Recipes
For the stuffing:
Ingredients:
Split bengal gram (chana dal): 250 grams
Cashews: 50 grams
Khoya: 100 grams
Milk: 1/2 cup
Clariifed butter/pure ghee: 3 tablespoons
Cardamom/elaichi powder: 1/2 teaspoon
Fennel seeds powder: 1/2 teaspoon
Jaggery (gud): 300 grams
Procedure:
1. Add split bengal gram or chana dal to a pressure cooker. Add 500 ml of water and close the lid.
2. Pressure cook till the lentils get tender.
3. Allow this to cool and grind into a fine paste. (Add 1/2 a cup of water to facilitate the grinding).
4. Keep the ground lentils aside.
5. Grind cashews into a fine powder and keep aside.
6. Add milk to khowa, mix well, break the lumps and keep aside.
7. Add clarified butter or pure ghee to a cooking pan.
8. Add lentil or chana dal paste and stir fry for about 3 minutes.
9. Add khowa and milk mixture, powdered cashews, cardamom or elaichi powder, fennel seeds powder or saunf, jaggery pieces and cook till the jaggery pieces are dissolved thoroughly and till the clarified butter separates.
10. Stuffing is ready, allow this to cool and divide into 10 equal portions.
For the covering: (for the dough):
Wheat flour: 500 grams
Salt: 3/4th teaspoon
Clariifed butter/pure ghee: 1 tablespoon
Procedure:
1. Add salt and clarified butter to wheat flour.
2. Mix well and gradually add water as per the requirement, gather and knead the dough.
3. Close the lid and allow this to rest for about 20 minutes.
4. After 20 min of resting, knead the dough again and divide into 10 equal portions.
Final preparation:
Ingredients:
Stuffing
Dough balls
Whaeat flour for dusting
Clarified butter/pure ghee for roasting or semi frying
Procedure:
1. Add wheat flour to the rolling plate.
2. Take one dough portion, roll into a small circular bread, roll through the edges.
3. Place the stuffing at the centre, take the edges of the bread and start pleating.
4. Join the pleats at the centre, roll and press lightly at the centre of the stuffed bread.
5. Slightly roll through the pleated area as it has more of dough covering.
6. Dust with wheat flour at times to prevent the bread from breaking (you can give a dough patch if you find any leakage area).
7. Pre- heat a frying pan. Add the stuffed and flattened bread and when one side is 1/4th cooked, flip the bread and cook again.
8. Apply clarified butter or pure ghee on both the sides and cook on both sides till you see dark brown spots.
9. Cook thoroughly as this bread is thicker.
10. Remove from the pan. Roll, stuff, flatten and roast or semi-fry the other puris in turns.
Puran Puris are ready. Store them in an airtight container for about 3 days.
