Recipe Ingredients
6 large ripe beefsteak tomatoes 🍅
300g fatty pork shoulder 🥩
1 small onion, finely chopped 🧅
2 cloves garlic, minced 🧄
1 egg, beaten 🥚
2 stalks lemongrass, finely chopped 🌿
1 tbsp fish sauce 🐟
1 tsp soy sauce
1 tsp palm sugar 🍯
Fresh cilantro or spring onion for garnish
Salt and pepper to taste
Cooking Instructions
1. Slice tops off tomatoes and scoop out pulp; reserve the pulp.
2. Combine pork shoulder, onion, garlic, lemongrass, egg, fish sauce, soy sauce, palm sugar, salt, and pepper in a bowl.
3. Chop the reserved tomato pulp and gently mix into the pork blend.
4. Stuff tomatoes with the pork mixture, pressing gently.
5. Steam for 25-30 minutes until pork is thoroughly cooked and tomatoes soften.
6. Garnish with fresh cilantro or spring onion. Serve hot with steamed rice or enjoy as is! 🍚🍽️
