İngredients
1 kilo of rice
1 whole chicken with skin
250 grams of raisins
250 grams of almonds
250 grams of pistachios
250 grams of chickpeas
1 tablespoon of salt
1 tablespoon of turmeric
1 tablespoon of cinnamon
1 tablespoon of cumin
1 tablespoon of chicken stock
2 tablespoons of sugar
1 tablespoon of oil
İnstructions
Step 1 – Prepare the Chicken
Rub the chicken with salt, turmeric, and a little oil.
Place it in a deep fryer or a pot and cook for about 2 hours on medium heat until soft.
Step 2 – Prepare the Almonds
Put the almonds in hot water and boil for 5 minutes.
Drain, then peel off the skins.
Step 3 – Prepare the Raisins
Wash the raisins well.
Fry them lightly in a bit of oil.
Sprinkle 2 tablespoons of sugar over them and set aside.
Step 4 – Cook the Chickpeas
Boil the chickpeas in hot water on low heat until soft.
(If using canned chickpeas, just rinse and set aside.)
Step 5 – Cook the Rice
Boil the soaked rice in salted water for about 15 minutes.
Drain the rice, then pour a little hot oil or melted butter over it.
Step 6 – Prepare the Stuffing Mix
Mix the peeled almonds, pistachios, raisins, and cooked chickpeas together.
Add cinnamon for flavor.
Step 7 – Stuff the Chicken & Assemble
Stuff the chicken belly with the nut-and-raisin mixture.
Place the stuffed chicken on top of the rice in a large pot.
Scatter any remaining nut mixture over the rice.
Cover and let it simmer on low heat for 15 minutes so the flavors combine
