► Anyone who has ever tried Japanese noodle dishes in Japan such as Udon, Soba & Ramen knows, the thing making these heavenly dishes so great, are the soup stocks the noodles are "drowned" in.
So what's the "secret" behind these stocks? It's all in the "dashi"!
Usually highly concentrated infusions, based on lots of vegetables such as shiitake mushrooms, but also, sardines, roasted flying fish and bonito flakes. So the dashi is what you really need the most, if you want to re-create these amazing soup stocks at home. But it doesn't do it alone, you also need to add, soy, cane sugar, maybe even sake, and other soup stocks (such as chicken or pork) to create your own signature noodle soup.
So basically this shop delivers almost all the specialties needed to create a lot of the well known Japanese dishes. Apart from that, I basically just like the interior of this shop, which is another reason I wanted to do this video - very friendly and helpful staff as well. Recommended!
