This easy lemon tart recipe is truly delicious. A classic lemon tart for only 40p per slice. A beautiful baked lemon dessert. Here are all of the ingredients you’ll need and the method.
For the pastry.
150g / 5.3oz Plain Flour 0.08
40g / 1.4oz Icing Sugar 0.10
Pinch of salt 0.00
100g / 3.5oz Butter 0.76
1 Egg 0.14
For the Filling.
6 Eggs 0.84
3 Lemons 0.30
150g / 5.3oz Caster Sugar 0.24
115g / 4oz Soft Butter 0.80
Total Cost. 3.26

Add the flour, icing sugar, and salt into a bowl. Add the butter and rub into the flour. Then add the egg and bring the dough together.
Shape into a round and place in the oven for 1 hour.
Roll the pastry out and line a 9 inch tart tin with it. Prong the bottom with a fork, line with greaseproof paper and fill with baking beans.
Bake in the oven at 175c / 347f / gas mark 3.5 for about 20 mins. Remove from the oven and remove the greaseproof paper and return to the oven for a further 10 mins.
Put 4 eggs and 2 yolks into a bowl and beat them.
In a pan put the butter and melt it then add the sugar and whisk together.
Add the zest of two lemons and the juice of all 3 and combine over the heat.
Take the better mix and pour it into the eggs a little at a time. Put it back into the pan over a low heat and heat to thicken, stirring continually.
When the mixture is bubbling slightly strain into a jug.
Pour the mixture into the pastry case and bake for 8 -10 mins at 170c.
Then allow it to cool and chill in the fridge for about 2 hours.
