These peri peri bites are crispy on the outside, juicy on the inside and packed with flavors. I have been making these for around 10 years..Inspired by Nando’s classic bites, this no-fail recipe is super easy to make and freezer friendly for stress free hosting!! They make a perfect crowd pleasing appetizer and you get all the praise you deserve from your loved ones!!

Here is the recipe..
Ingredients for filling
Mayonnaise 4 tbsp heaped
Kiri cheese 6 cubes
Chilli flakes 1/2 tsp
Lemon salt. 1/2 tsp
Vinegar. 1 tsp
For grilled chicken
Boneless chicken breast cut into small thin slices. 2
Salt 1/2 tsp
Black pepper 1/2 tsp
Paprika 1/4tsp ( I sometimes substitute it with red chili powder)
Garlic paste. 1/2 tsp
Lemon juice. 1 tbsp
peri peri sauce. 1 tbsp
Soya Sauce 1 tbsp
Vinegar 1 tbsp
For coating
Flour 4 tbsp heaped
Corn flour. 3 tbsp heaped
Rice flour. 3 tbsp heaped (optional)
I usually double the quantity
Eggs as required I used 2
Bread crumbs as required (I used around 2 cups)
Green chilis Around 15 to 20
Method:
-Marinate the chicken for atleast 30 mins with the ingredients mentioned and grill with 2 tbsp oil
mix the ingredients for filling. Use cheese at room temperature..
-Combine the grill chicken with cheese and mayo mix.
-Make a slit on green chilies and remove all the seeds. Don’t forget to wear 🧤 or your hands might burn afterwards.
Fill all the chilis and coat with egg, flour and bread crumbs as shown in the video.
-Sometimes I like to do it twice to make it even and nice.
-Don’t forget to chill these for an hour in the refrigerator before deep frying. This extra step ensures your peri bites are nice and crisp giving you restaurant quality taste😋..Trust me its worth all the wait..

Tips:
-Assemble and freeze them on a tray, then store them in an airtight container. Fry straight from frozen..no need to thaw!
Double coat with breadcrumbs for the ultimate crunch!

Use mild chilies for a lighter kick or extra peri-peri sauce or chili flakes for a fiery bite!
