WHITE MACARONS RECIPE BY ALL KIND COOKING CHEF.
Ingredients
For the shells:
1 1/2 cups (190g) almond flour (also known as ground almonds)
1 1/2 cups (200g) confectioners' sugar
3 large egg whites
1/2 cup (120g) granulated sugar
Food coloring (optional)
For the buttercream filling:
1 cup (200g) unsalted butter, softened
2 cups (400g) confectioners' sugar
1 teaspoon vanilla extract
Instructions
1. Preheat oven to 300°F (150°C).
2. Prepare parchment-lined baking sheets.
3. Sift almond flour and confectioners' sugar.
4. Beat egg whites until stiff peaks form.
5. Gradually add granulated sugar and beat until smooth.
6. Add sifted almond flour mixture and fold until well combined.
7. Transfer mixture to a piping bag.
8. Pipe small, round circles onto prepared baking sheets.
9. Tap baking sheets gently to remove air bubbles.
10. Allow shells to sit at room temperature for 30 minutes to an hour to form a skin.
11. Bake for 15-20 minutes or until firm to the touch.
12. Allow shells to cool completely.
13. Prepare buttercream filling by beating butter until creamy.
14. Gradually add confectioners' sugar and beat until smooth.
15. Add vanilla extract and beat until combined.
16. Assemble macarons by spreading a small amount of buttercream on one shell and sandwiching with another.
Tips
1. Use aged egg whites for better stability.
2. Sift almond flour and confectioners' sugar for smooth shells.
3. Tap baking sheets gently to remove air bubbles.
4. Allow shells to sit at room temperature for 30 minutes to an hour to form a skin.
5. Experiment with different flavor combinations and colors.
Variations
1. Raspberry macarons: add raspberry jam and fresh raspberries.
2. Chocolate macarons: add cocoa powder or melted chocolate.
3. Lemon macarons: add lemon zest and lemon juice.
