Recipe for a DOUBLE BATCH below. I cut it in half for this video except for using 2 eggs.
3/4 cup Almond flour
1 1/3 Cup AP flour sifted
3 Large eggs
1 Cup sugar
1 Vanilla bean
7oz Butter melted and room temp
10oz Cherries Luxardo or Amarena liquid strained
1 cup Pastry cream
For egg wash
1 egg
1 tablespoon water
Beat both together
A couple notes:
-Use any fruit you like. Anything sweet and cooked down into a thick syrup would work best. Fresh fruit will have too much water.
-This recipe is a double batch and in the video I used a half batch using two eggs instead of 1.
Egg wash is important to give the cake that nice golden brown color.
Rotate your cake half way through cooking to ensure even color.
Use you substitute the almond flour for any kind of nut flour and it would turn out great.
Place this cake in the fridge overnight. Slice and warm each piece in an oven for a few minutes before eating for best flavor.
