Khamang Kakdi or Kakdichi Koshimbir is a very tasty and easy to make refreshing and delicious Maharashtrian Cucumber Salad.It s main ingredients are cucumber,roasted peanuts, coconut,green chillies,to which a flavourful tempering of cumin seeds, asafoetida and curry leaves are added.A little bit of sugar and lemon juice or thick curd is added to balance the flavours.
Khamang Kakdi is served as a tasty side dish at lunch or dinner time and tastes best with chapati ,dal, rice etc.
Ingredients
Chopped cucumber(ककड़ी)-1 cup
Coarsely crushed peanuts(सेंगदाना)-2 tbsp
Grated fresh coconut(नारियल)-2 tbsp
Salt to taste(नमक)
Sugar(चीनी)-1 tsp
Chopped green chillies(हरी मिर्च)-1 tbsp
Chopped coriander leaves(धनिया पत्ता)-a handful
Juice of half a lemon(नींबू का रस)
For Tempering
Oil(तेल)-1 tbsp
Cumin seeds(जीरा)-1 tsp
Dry red chilli(सूखीलाल मिर्च)-1
Asafoetida powder(हींग)-1/4 tsp
Curry leaves(करी पत्ता)-6
For garnishing
Chopped coriander leaves(धनिया पत्ता)
Crushed roasted peanuts(सेंगदाना)
Grated fresh coconut(ताजा नारियल)
Method
Roughly crush roasted peanuts in a mortar and keep aside.
In a bowl,add chopped cucumber, coarsely crushed peanuts,fresh grated coconut,salt,sugar,green chillies, coriander leaves lemon juice and mix well.
Heat oil,add cumin seeds,dry red chilli, asafoetida powder and curry leaves.Saute for a few seconds.
Add this tempering to the salad and mix well.
Transfer Khamang Kakdi to a serving bowl and garnish with some fresh coriander leaves,roughly crushed peanuts and grated fresh coconut.
