Science Team! I’ve been traveling through Indonesia for the last 10 days and I saw something that caught my eye while I was in the Labuan Bajo airport…Kopi Luwak!
This is the worlds most expensive coffee and the reason why is pretty gross. The Asian palm civet eats a coffee cherry, digests it, poops it out, and then the bean left over from the feces is dried out, roasted, ground up and served as one expensive beverage!
The science says that the digestive juices change the protein structure of the bean thus changing the flavor… I’ll be the judge of that.
Also to note, there is a dark cloud surrounding the Kopi Luwak industry with mistreatment or farms of Asian Palm Civets. It’s terrible, and in fact I’m here to tell you that this coffee tastes like crap and no one should ever buy it.
