A lovely chicken stock, a weekly staple at my place and the base for so many amazing recipes!
INGREDIENTS
1.4 litres water
400g chicken wings (approx)
2-3 medium carrots, cut horizontally and then into 4cm pieces
2 sticks celery cut into 4cm pieces
1 large onion peeled and cut into quarters
12 black peppercorns
1/2 bunch parsley (stems ok)
2-3 small dried bay leaves, (or 1 large)
1 tbsp apple cider vinegar (optional, helps extract nutrients from bones).
STEPS
Insert blade cover into Thermomix and add water.
Cut chicken wings into three or four pieces and add to Thermomix bowl. Add remaining ingredients. Make sure max fill line in Thermomix bowl is not exceeded, if so, remove some water.
Attach lid with simmering basket on lid instead of measuring cup. Cook 99 mins/100°C/Speed 0.5
Check and adjust seasoning and continue to cook for 30 mins/100°C/Speed 0.5
Strain stock through a fine sieve.
Use or cool and freeze in one cup portions in a zip lock bag, removing as much air as you can.
