This Spicy Tomato & Lentil Soup is warming, hearty, and full of bold flavor. Red lentils add plant-based protein and fiber, while spices and tomatoes create a rich, comforting base. An easy, nourishing soup that’s perfect for meal prep or cozy weeknight dinners.

Ingredients:
•1 Tbsp olive oil
•1 medium onion, diced
•2 cloves garlic, minced
•1 large carrot, chopped
•1 (15 oz) can diced tomatoes, no salt added
•1 cup red lentils, rinsed
•4 cups low-sodium vegetable broth
•1 tsp ground cumin
•1/2 tsp ground turmeric
•1/4 tsp smoked paprika
•1/4 tsp cayenne pepper
•1 tsp ground coriander
•Salt and black pepper, to taste
•1 Tbsp fresh lemon juice
•Fresh cilantro, chopped (for garnish)
•Plain yogurt, optional (for garnish)
Instructions:
1️⃣ Heat olive oil in a large pot over medium heat. Add onion and sauté 4–5 minutes until softened. Add garlic and carrot and cook 2–3 minutes until fragrant.
2️⃣ Stir in cumin, turmeric, smoked paprika, cayenne, and coriander. Cook 1–2 minutes to bloom the spices.
3️⃣ Add lentils, diced tomatoes (with juices), and vegetable broth. Bring to a boil.
4️⃣ Reduce heat to low, cover, and simmer 25–30 minutes, stirring occasionally, until lentils are tender and soup thickens.
5️⃣ Taste and adjust seasoning with salt, pepper, or extra cayenne. Stir in lemon juice to brighten flavors.
6️⃣ Ladle into bowls and garnish with fresh cilantro and yogurt if desired.
