When you taste olive oil, there are three points that you should mainly look for:
1. Fruitiness - aroma detected by nose and overall flavor detected by tongue
2. Pungency - spicy feeling in the back of the throat
3. Bitterness - sensation that persists on the tongue
The best Olive Oils represent a combination that is a great balance of the three above points. Unfortunately, most olive oil on the market do not meet this criteria.
