India’s western Gujarat state, the largest salt-production area in the country, is where farmers work under scorching heat to pump out briny water from handmade wells. Each tonne (1.1 tons) of the harvested salt sells for about 300 rupees (US$4), but only about 40 per cent goes to the workers. Salt farmers in the region have also been under growing pressure as production is slashed by unpredictable rainfall, rising temperatures and frequent dust storms.
