VEG MODHURI
Ingredients:-
1) Potato (Diced) - 1Cup...
2) Pumpkin (Diced) - 1Cup...
3) Cauliflower (small cut) - 1.5 Cup...
4) Whole Green Chilli - 2 Nos...
5) Asafoetida - 1/4 Tablespoon
6) Whole red chilli - 1 Piece...
7) Panchphoren - 1 Teaspoon...
8) Bay Leaves- 1Piece...
9) Turmeric Powder - 1
10) Teaspoon
11) Salt - as per requirement
12) Honey - 1 Tablespoon
13) Mustard oil - 4 Tablespoon
Procedure:-
1) Cut potato and pumpkin in thick diced and cauliflower cut into small florets keep aside.
2) Heat oil in a karahi and add panchphoren, whole red chilli, bay leaves and asafoetida. Let it crackle and then add potatoes and pumpkin...
3) Fry the potatoes & pumpkin till they become light brown.
4) Then add cauliflower, turmeric powder and salt and mix it well...
5) Than add honey and mix it again...
6) Put a lid on and cook on low heat...
7) Add 1/2 cup water, green chilli, and asafoetida mix well and cook on low flame for 10 mints....
8) Finally turn off the gas...
9)Serve with luchi /plain paratha / ruti / dal and rice.
