✍🏻INGREDIENTS:
Gram flour ( चने का आटा( बेसन) - 1.5 Cup
Jaggery (गुड़) - 1 Cup
Edible Gum/Gond (गोंद) - 100 Gram
Ghee (घी) - 150 Gram
Gond edible gum 1/2 cup
Almonds (बादाम) - 100 Gram
Cashew Nuts (काजू) - 50-60 Gram
Walnut(अखरोट) - 100 Gram
Pistachio (पिस्ता) - 25 Gram
Melon Seeds (खरबूजे के बीज) - 1/4 Cup
Pumpkin Seeds (कद्दू के बीज) - 1/4 Cup
Raisins (किशमिश) - 25-30 Gram
Fox Nuts(मखाना) - 3 Cup
Fennel (सौंफ)
Flaxseed (अलसी)
Cardamom(इलायची)
Water (पानी) - 1/2 Cup
खजूर 1 cup
khaskhas 2 Tbsp

✍🏻RECIPE:
In a pan, put some Ghee and roast Edible Gum/Gond, Almonds, Cashew Nuts, Walnuts, Pistachio, Melon Seeds, Pumpkin Seeds, Raisins, and Lotus Seeds/Makhana separately. Then take them out on a plate/Thali. Keep for cool then coarsely grind all. Keep the pan for heating, add Water and Jagger. Cook till the Jaggery gets dissolved properly then filter the mixture. Add some more Ghee, Semolina, and Wheat Flour Atta in the same pan and roast on a slow flame. Then add coarsely ground Fennel Seeds and Flax Seeds and roast as well. Now add Cardamom Powder and ground Dry Fruit Powder and mix well. Then gradually add Jaggery Water and mix well. Add remaining Dry Fruits, Seeds, and Ghee. Keep it in an airtight jar and enjoy it in winter. In this way, Gud Panjiri will be ready at home

Ingredients and process :
Step 1: Roasting the Dry Fruits and Seeds
The recipe begins by roasting various dry fruits and seeds in a pan with ghee. The ingredients are roasted one by one and set aside.
Step 2: Processing the Ingredients
After roasting, the dry fruits and seeds are processed for texture.
The roasted almonds, cashews, and fox nuts are pulsed in a grinder to a coarse, chunky texture, not a fine powder.
The grated coconut, poppy seeds, and raisins are not ground. They are mixed with the ground dry fruits to retain their original texture.
Cardamom Powder: 1 teaspoon and a small amount of grated Nutmeg (Jayfal) are added to the mixture for flavor.
Chopped Pistachios: 2 tablespoons of pistachios are mixed in
Step 3: Preparing the Jaggery Syrup
A simple jaggery syrup is made as the binding agent for the pag.
Jaggery (Gud): 2 cups of crushed jaggery are added to a clean pan.
Water: 2 to 3 tablespoons of water are added to help the jaggery melt.
The jaggery is stirred continuously on a medium flame until it melts completely and a bubbly, single-string consistency syrup forms .
Step 4: Combining and Setting the Pag
The pan is removed from the heat, and the mixed dry fruit and seed mixture is immediately added to the melted jaggery.
The mixture is stirred quickly to combine everything thoroughly.
