Stuffed Tomatoes with Pork, Egg, and Feta Cheese
Ingredients:
4 large tomatoes
170 g ground pork
1 tbsp olive oil
Dried oregano
Salt and pepper, to taste
4 small eggs (1 per tomato)
1/4 cup crumbled or grated feta cheese
Fresh parsley, chopped (for garnish)
Dried basil (optional for extra flavor)
Instructions:
Preheat the oven to 375°F (190°C).
Slice off the tops of the tomatoes and set them aside. Using a spoon, gently scoop out the pulp and seeds, leaving the insides smooth and clean. Place the tomatoes upside down on a paper towel to drain excess moisture.
Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the ground pork and cook for 8-10 minutes, until browned and fully cooked. Season with salt, pepper, and a sprinkle of dried oregano. Continue cooking for another 5 minutes to allow the flavors to meld. Remove from heat.
Place the tomatoes upright in a baking dish. Fill each tomato halfway with the cooked pork mixture. Carefully crack a small egg on top of the pork in each tomato.
Sprinkle grated feta cheese over the eggs, then add a few dried basil leaves to add flavor.
Bake the stuffed tomatoes in the preheated oven for 15-20 minutes, or until the egg whites are set while the yolks remain slightly runny (or cooked to your desired doneness).
Garnish with freshly chopped parsley and serve warm.
