Ingredients quantity
Bathua leaves - 1 bunch
Coriander seed - 1 tbsp
Ajwain - 1 tsp
Ginger - 1 tsp
Green chilli - 2-3 nos
Coriander leaves - 2 tsp
Onion - 1 nos
Wheat flour - 1 ½ cup
Sattu atta - ½ cup
Salt to taste
Turmeric powder - ½ tsp
Dry mango powder - 1 tsp
Garam masala - ¼ tsp
Water as required
Ghee as required
Red chilli powder a sprinkle
Chaat masala a sprinkle

Method :
1. Take Wash & clean Bathua leaves roughly chop it and add it in parath .
2. Meanwhile coarsely grind the coriander seed using wooden mortar & pestle add it in the mixture .
3. Now add ajwain ginger green chilli , coriander leaves,onion , wheat flour , sattu aata ,salt ,
turmeric powder , dry mango powder , garam masala , mix it well .
4. Add water as required and knead the soft dough.
5. cover it with moist cloth and keep it to rest for 30 mins.
6. Put some wheat flour on work place, take portion of dough roll it in wheat flour and gently flatten
it.
7. Now apply a spoonful of ghee , wheat flour ,then fold it vertically from both end , roll it into square
shape .
8. Heat a tava on medium heat and place the paratha on it and cook on both the sides.
9. Apply ghee on both the sides and cook flipping sides till evenly golden.
10. Remove in a plate, add some ghee on top of the paratha, sprinkle some red chilli powder, chaat
masala and crush the paratha .
11. Serve hot .
