酥皮於包裹餡料前,建議皆放至冷凍保存,避免放置室溫而快速軟化。
先包妥好的蘋果派,可於底部隔著烘焙紙放至冷凍,待所有蘋果派皆包妥後,再一併放入烤箱烘烤,以避免放置室溫而軟化變形。

食材|約9份
蘋果-500g、白砂糖-80g、檸檬汁-2湯匙、肉桂粉-½茶匙、市售冷凍酥皮-5片、熱水-50ml、蛋液-1顆、玉米粉水或太白粉水-2湯匙(1湯匙玉米粉+2湯匙水)
步驟
(1) 將蘋果去皮且切丁,再將蘋果丁、檸檬汁及白砂糖放入鍋中,開中小火,將蘋果丁拌炒至半透明色,約20至30分鐘。
(2) 放入熱水及肉桂粉,維持中小火拌炒3分鐘,再倒入玉米粉水,並迅速拌勻至黏稠即可關火。
(3) 將烤箱預熱至200°C。將冷凍酥皮切成長方形(約12x6cm),於酥皮下方放入1.5湯匙的蘋果餡料,再於內面四邊塗抹少許蛋液。
(4) 將酥皮對折包妥,並以叉子壓合四邊,以小刀於酥皮表面劃上3道線條,避免酥皮膨脹而破裂,再於酥皮表面均勻塗抹蛋液。
(5) 將酥皮蘋果派放在鋪有烘焙紙的烤盤上,再放入烤箱中以200°C烘烤至表面金黃即可,約20至25分鐘。

Ingredients|around 9 servings
500g apple, 80g granulated sugar, 2 Tbsp lemon juice, ½ tsp cinnamon powder, 1 package of store-bought puff pastry sheets, 50ml warm water, 1 egg, 2 Tbsp cornstarch slurry(1 Tbsp cornstarch mix well with 2 Tbsp water)
Instructions
(1) Peel the apple, then cut into dice. In a pot, add the diced apple, lemon juice and granulated sugar. Turn to medium-low heat, stir fry until translucent, around 20 to 30 minutes.
(2) Add the cinnamon powder and warm water, cook another 3 minutes. Pour the cornstarch slurry and stir well until thicken.
(3) Preheat the oven to 200°C. Cut the puff pastry sheets into a rectangle shape, around 12 cm x 6 cm. Place 1.5 Tbsp apple mixture on the puff pastry sheets.
(4) Fold the puff pastry sheets over, brush pastry edge with egg wash and pinch the edges together, then seal shut using the fork. Make 3 slits across the apple mound for ventilation with a knife, then brush pastry tops with egg wash.
(5) Transfer the pastry to a parchment-lined baking sheet. Bake the pastry at 200°C until golden brown, around 20 to 30 minutes. Enjoy!
